It’s that time of year when we’re all a little more aware of what we’re eating. So, I offer you a beautiful winter salad that tastes as wonderful as it is good for you.
Avocado & Orange Salad
- 1/2 of an avocado sliced
- 1 orange segmented (I used Cara Cara. My new obsession.)
- 2-3 cups baby greens (I used romaine.)
- 1 tsp. Dijon mustard
- 1 tsp. agave nectar or honey
- 1 tbsp. red wine vinegar
- 2 tbsp. evoo
- Salt and pepper to taste
In a bowl, salt and pepper the greens.
Then, in a small bowl, add the mustard, agave nectar and red wine vinegar. Whisk to combine. Stream in the evoo, whisking as you go.
Add salt and pepper to taste, and place the avocado and orange pieces in the bowl .Drizzle over the salad and toss to combine.
